Black River Holiday Sweet and Spicy Cheese, Fruit and Chocolate Grazing Board
Materials
- Choose your favourite in season fruit chocolate pieces, chocolate wafers, honey butter, dried fruit and nut crackers, dried apricots, dates, roasted chestnuts
- 1 pkg Black River Pepper Jack Cheese
- 1 pkg Black River Maple Cheddar cut in bite size cubes
Spiced Nut Mix
- 1 1/2 cup mixed nuts and dried cranberries almonds, pistachio, cashews, hazelnuts, pecans
- 2 tbsp quality honey
- 1/8 tsp cayenne pepper
- 1/4 tsp cumin
- 1/4 tsp cinnamon
- 1/4 tsp sea salt
Dark Rum Chocolate Ganache
- 6 oz quality dark chocolate finely chopped
- 1/2 cup heavy cream
- 1 tbsp dark rum
Instructions
- To make spiced nut mix, line baking sheet with parchment and set aside.
- Melt honey in a large skillet over medium heat.
- Add spices and and stir. Let cook for 1 minute stirring until aromatic.
- Add nuts and stir until well coated. Cook for another 3 minutes.
- Place spiced nuts on lined baking sheet and spread out. Let stand until cooled before serving.
- To make ganache, place chocolate in a small glass bowl.
- In a small saucepan, heat heavy cream over until it comes to a slight boil.
- Pour hot cream over chocolate and whisk until melted and velvety.
- Stir in dark rum.
- Arrange all of the above on a wooden platter and serve.
