Indian Inspired No-Waste Skillet Hash

This Indian inspired no-waste Skillet Hash is a flavourful and delicious way to continue celebrating Earth Month. No need to compost those vegetable tops, potato skins and wilted ingredients. I have partnered with @Nutiva to create a recipe that you will absolute love with no-waste. This flavourful skillet features sweet potatoes, carrot and beet tops, those forgotten wilted cherry tomatoes, onions, fresh garlic and garam masala spice sautéed with Nutiva’s Organic Virgin Coconut Oil. Topped with farm eggs, chilli oil and served with naan bread toast, it makes for a perfect breakfast, brunch, lunch or dinner.

Indian Inspired No-Waste Skillet Hash

Materials

  • 3 tbsp Nutiva's Organic Virgin Coconut Oil
  • 1 medium onion diced small
  • 3 green garlic or two garlic cloves minced
  • 1 1/2 cup wilted cherry tomatoes
  • 1 tbsp garam masala spice
  • 1 medium sweet potato washed with skin on and diced in 1/2 inch cubes
  • 1 cup carrot tops finely chopped
  • 1 cup beet tops finely chopped
  • 4 large eggs
  • Chilli oil and fresh cilantro for garnish
  • 2 Naan pita’s quartered
  • olive oil for drizzling

Instructions

  • In a large cast iron skillet or non stick pan, heat coconut oil over medium heat.
  • Add onions and garlic and saute for 2 minutes until soft and translucent. Add tomatoes and garam masala spice and saute until tomatoes have softened and reduce their juices, about 6-8 minutes. You can helpmthem along by pressing down on them with the back of a spoon.
  • Add in sweet potatoes and cook for 10-12 minutes until slightly softened, stirring occasionally for even cooking.
  • Stir in carrot and beet tops and cook for an additional 2-3 minutes until greens have softened.
  • Make 4 wells in the sweet potato hash and crack an egg in each, being careful not to break the yolk. Cover and let cook until eggs have cooked to your liking.
  • While eggs are cooking, place naan bread in toaster, toast until golden and drizzle with olive oil.
  • Remove skillet from heat, drizzle with chilli oil and garnish with fresh cilantro. Serve warm with naan bread toast.
