Cherry Brandy, Harissa and Smoked Honey BBQ Sauce

unsalted butter

shallots
finely diced

garlic clove

Harissa paste

Ketchup

smoked honey
or any quality honey
¼
cup
grainy mustard

sherry vinegar
Instructions
Add cherries in a medium bowl and toss with brandy.
In a large saucepan, melt butter over medium heat.
Add shallots and garlic and sauté for 2 mins until soft and translucent.
Add Harissa Paste and sauté for another minute. Add remaining ingredients and cherries. Bring to a boil, reduce heat
to low and simmer for 30 mins.
