Cherry Brandy, Harissa and Smoked Honey BBQ Sauce

Materials

  • 2 cup sweet Cherries pitted
  • 1 1/2 oz brandy
  • 2 tbsp unsalted butter
  • 2 shallots finely diced
  • 2 garlic clove minced
  • 1 1/2 tbsp Harissa paste
  • 2 cup Ketchup
  • ¼ cup smoked honey or any quality honey
  • ¼ cup grainy mustard
  • 2 tbsp sherry vinegar

Instructions

  • Add cherries in a medium bowl and toss with brandy.
  • In a large saucepan, melt butter over medium heat.
  • Add shallots and garlic and sauté for 2 mins until soft and translucent.
  • Add Harissa Paste and sauté for another minute. Add remaining ingredients and cherries. Bring to a boil, reduce heat
  • to low and simmer for 30 mins.
