Grilled Avocado and Mango Guacamole

Materials

  • 2 tbsp of Spanish olive oil or Avocado oil + more for drizzling
  • 3 ripe avocados
  • 1 mango peeled and cut into large slices
  • 1 clove garlic minced
  • 1/3 cup of red onion diced
  • 1/3 cup of fresh chopped cilantro
  • 1 JalapeƱo pepper sliced in half lengthwise
  • Juice of 1 lime + 1 lime halved
  • Smoked Spanish paprika
  • Salt and fresh ground pepper

Instructions

  • Heat grill or grill pan on medium/high heat, then carefully oil grill. Halve, pit and peel the avocados then squeeze on a little lime juice to prevent browning.
  • Drizzle avocados with 1 tablespoon of olive oil and sprinkle with salt and pepper.
  • Place avocado's, mango slices and jalapeno cut side done on the hot grill and cook until grill marks form, about two minutes per side.
  • Place additional lime cut side down on grill and let grill while you prepare the guacamole.
  • Cut mango into small cubes and finely dice jalapeno. You can remove the seeds for a milder spice.
  • Smash avocados in a bowl and add in mango and jalapeno.
  • Add onions, cilantro, garlic, lime juice and mix well. Give it a taste to see if it requires a bit more salt.
  • Drizzle guacamole with Spanish olive oil or Avocado oil and sprinkle the smoked paprika.
  • Serve topped with grilled lime, tortilla chips and your favourite Margarita or Mexican beer.
