Heat grill or grill pan on medium/high heat, then carefully oil grill. Halve, pit and peel the avocados then squeeze on a little lime juice to prevent browning.
Drizzle avocados with 1 tablespoon of olive oil and sprinkle with salt and pepper.
Place avocado's, mango slices and jalapeno cut side done on the hot grill and cook until grill marks form, about two minutes per side.
Place additional lime cut side down on grill and let grill while you prepare the guacamole.
Cut mango into small cubes and finely dice jalapeno. You can remove the seeds for a milder spice.
Smash avocados in a bowl and add in mango and jalapeno.
Add onions, cilantro, garlic, lime juice and mix well. Give it a taste to see if it requires a bit more salt.
Drizzle guacamole with Spanish olive oil or Avocado oil and sprinkle the smoked paprika.
Serve topped with grilled lime, tortilla chips and your favourite Margarita or Mexican beer.
