Grilled Avocado & Mango Guacamole
We are celebrating Cinco de Mayo when translated means fifth of May. It’s a holiday that celebrates the date of the Mexican army’s May 5, 1862 victory over France at the Battle of Puebla during the Franco-Mexican War. It is also known as the Battle of Puebla Day. While it is a relatively minor holiday in Mexico, in Canada and the United States, Cinco de Mayo has evolved into a commemoration of Mexican culture and heritage. In honour of this celebration, we always enjoy a Mexican fiesta as a family. We love taco’s but guacamole is a must when it’s Mexican night. I have taken the traditional guacamole and given it a sweet smokey flavour. My Grilled Avocado and Mango Guacamole recipe is absolutely delicious and simple to make. Grilling the avocado, mango and jalapeno helps elevate their flavours. I love topping it with smoked paprika for a slightly smokey flavour. This guacamole is not just for dipping, it makes for a delicious topping on rice bowls. Serve it for breakfast or brunch with steak, eggs and tortillas. Grilled Avocado and Mango Guacamole
Materials
- 2 tbsp of Spanish olive oil or Avocado oil + more for drizzling
- 3 ripe avocados
- 1 mango peeled and cut into large slices
- 1 clove garlic minced
- 1/3 cup of red onion diced
- 1/3 cup of fresh chopped cilantro
- 1 Jalapeño pepper sliced in half lengthwise
- Juice of 1 lime + 1 lime halved
- Smoked Spanish paprika
- Salt and fresh ground pepper
Instructions
- Heat grill or grill pan on medium/high heat, then carefully oil grill. Halve, pit and peel the avocados then squeeze on a little lime juice to prevent browning.
- Drizzle avocados with 1 tablespoon of olive oil and sprinkle with salt and pepper.
- Place avocado’s, mango slices and jalapeno cut side done on the hot grill and cook until grill marks form, about two minutes per side.
- Place additional lime cut side down on grill and let grill while you prepare the guacamole.
- Cut mango into small cubes and finely dice jalapeno. You can remove the seeds for a milder spice.
- Smash avocados in a bowl and add in mango and jalapeno.
- Add onions, cilantro, garlic, lime juice and mix well. Give it a taste to see if it requires a bit more salt.
- Drizzle guacamole with Spanish olive oil or Avocado oil and sprinkle the smoked paprika.
- Serve topped with grilled lime, tortilla chips and your favourite Margarita or Mexican beer.
