Mediterranean Inspired Chicken Salad Pitas

These beautiful and delicious Mediterranean Inspired Chicken Salad Pitas can be made in under 30 minutes. Using store bought or leftover roast chicken makes them quick to make. With the warmer weather, we have been enjoying as much time outdoors as well as quick meals al fresco. These Mediterranean chicken salad pitas are perfect for summer picnics or a quick weeknight dinner. Leftover or store bought roast chicken, green onions and dill are tossed together with Greek yogurt and feta for its creaminess. Adding Sardo Foods Antipasto Bruschetta and their Jalapeno Tapenade is what really brings the delicious Mediterranean flavour to life. I served them with Sardo’s Foods Marinated Artichokes and Party Mix Olives for a delicious simple picnic meal.

Mediterranean Inspired Chicken Salad Pitas

Materials

  • 4 cup leftover roasted chicken or store bought roughly chopped in bite size pieces
  • 1/2 cup Sardo Foods Sweet Pepper Bruschetta
  • 4 green onions thinly sliced
  • 2 tbsp fresh dill finely chopped
  • 1/4 cup plain Greek yogurt
  • 1/4 cup crumbled feta
  • 1 tsp Sardo Foods Jalapeño Tapenade optional if you enjoy a little spice
  • 1/2 tsp salt
  • 1/2 tsp fresh ground pepper
  • 4 pieces of red leaf or green leaf lettuce
  • 12 cucumber rounds thinly sliced

Instructions

  • Place chicken in a large bowl, add bruschetta mix, onions, dill, yogurt, feta and jalapeño tapenade. Season with salt and pepper and mix well.
  • To assemble, lay pita’s flat and top each pita with lettuce and 3 slices of cucumber. Divide chicken mixture evenly on top.
  • Fold pita together and wrap in parchment for easy transporting and handling. Serve with olives and marinated artichokes.
