Drunken Cherry and Dark Chocolate Loaf

Ontario cherry season has arrived and they are bursting with so much sweet flavour. Drunken cherries are my go to recipe every year and are so delicious and very versatile. In this recipe, I have paired them with a decadently moist dark chocolate loaf that you are going to absolutely love. It is made with the goodness of quality honey, eggs, Greek yogurt and dark chocolate. This cake can be made the night before and slightly warmed when ready to serve. You can enjoy it with a dollop of whip cream or a scoop of vanilla ice cream.

Drunken Cherry and Dark Chocolate Loaf

Drunken Cherry and Dark Chocolate Loaf

Materials

Drunken Cherries

  • 3 cup cherries stems removed and pitted
  • 9 g vanilla sugar
  • 1 oz whiskey

Chocolate Loaf Cake

  • ½ cup unsalted butter room temperature
  • ½ cup quality raw cream honey
  • 2 large eggs room temperature
  • 1 tsp. pure vanilla
  • cup all-purpose flour
  • 2 tbsp quality cocoa
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp salt
  • 3/4 cup Greek vanilla yogurt
  • 150 g dark chocolate finely chopped

Instructions

  • To make drunken cherries, add cherries, vanilla sugar and whiskey in a medium sauce pan over medium heat. Simmer until cherries have softened, released their juices and thicken slightly. Stirring occasionally for about 10 minutes. Set aside to cool.
  • Preheat oven to 350F.
  • Butter a 8×5 loaf pan.
  • In a large bowl of a stand up mixer, beat butter and honey at medium speed until fluffy.
  • Add eggs in one at a time and beat well after each egg.
  • Beat in vanilla until blended.
  • Stir in 1 ½ cup flour, cocoa, baking powder, baking soda and salt.
  • Mix in yogurt and 100g of the chocolate until well combined.
  • Pour batter into loaf pan and bake for 35-45 mins until set and a toothpick inserted comes out clean.
  • Let loaf sit for 5 mins before removing from loaf pan.
  • Let cool and top with drunken cherries.
  • Melt remaining 50g of chocolate and drizzle on top of cherries and loaf.
