Materials
450gItalpasta Artisan Spaghetti or your favourite Artisan pasta shape
6cupvegetable stock
1tspsalt
juice of one lemon
3tbspdried mint
1 1/2cupgrated halloumi cheese
salt to taste
Instructions
In a large pot, bring the vegetable stock to a rolling boil and season with salt.
Add spaghetti to the boiling vegetable stock and stir. Cook uncovered for 6 -8 minutes, stirring occasionally until liquid has slightly thickened and spaghetti is al dente.
Stir in lemon juice and place spaghetti in a large patter with its liquid.
