Cypriot Halloumi and Mint Lemony Pasta (Makaronia Vrasta)

Materials

  • 450 g Italpasta Artisan Spaghetti or your favourite Artisan pasta shape
  • 6 cup vegetable stock
  • 1 tsp salt
  • juice of one lemon
  • 3 tbsp dried mint
  • 1 1/2 cup grated halloumi cheese
  • salt to taste

Instructions

  • In a large pot, bring the vegetable stock to a rolling boil and season with salt.
  • Add spaghetti to the boiling vegetable stock and stir. Cook uncovered for 6 -8 minutes, stirring occasionally until liquid has slightly thickened and spaghetti is al dente.
  • Stir in lemon juice and place spaghetti in a large patter with its liquid.
  • Toss with dried mint and grated halloumi cheese.
  • Season with additional salt if needed.
  • Serve immediately
