Cypriot Halloumi and Mint Lemony Pasta (Makaronia Vrasta)

Do you have that one meal that is very nostalgic and brings back special memories? When Italpasta asked me to partner to share my favourite family recipe, one that evokes memories of special connection, memories of my first pasta, this Cypriot dish is it!  Makaronia Vrasta, a very humble but comforting and delicious pasta dish. Its one that made us feel loved. In Cypriot Makaronia meaning pasta and Vrasta meaning warm. This was one of the dishes my yiayia (grandmother) and mum made us as children. It was comfort food, soul food and a meal that I now make for my family. Pasta cooked in a thicken lemony vegetable broth with dried mint and lots and lots of grated halloumi cheese. I have always preferred mine simple but mum in many occasions added chicken for protein and a hearty meal, especially during the colder months.  It’s simple to make and makes it on the dinner table in 15 minutes.

Cypriot Halloumi and Mint Lemony Pasta (Makaronia Vrasta)

Materials

  • 450 g Italpasta Artisan Spaghetti or your favourite Artisan pasta shape
  • 6 cup vegetable stock
  • 1 tsp salt
  • juice of one lemon
  • 3 tbsp dried mint
  • 1 1/2 cup grated halloumi cheese
  • salt to taste

Instructions

  • In a large pot, bring the vegetable stock to a rolling boil and season with salt.
  • Add spaghetti to the boiling vegetable stock and stir. Cook uncovered for 6 -8 minutes, stirring occasionally until liquid has slightly thickened and spaghetti is al dente.
  • Stir in lemon juice and place spaghetti in a large patter with its liquid.
  • Toss with dried mint and grated halloumi cheese.
  • Season with additional salt if needed.
  • Serve immediately
